The Maison Brûlée salon with marble bar and velvet seating

Roastery · Salon · Patisserie

Coffee kept slow,served beautifully.

Twenty-eight seats, one roaster, and a rotating shelf of micro-lots we buy a single barrel at a time. Sit a while.

The Maison

A café built around one obsession

Maison Brûlée began in 1998 as a two-barrel roastery behind a bakery on Rue des Braises. We still roast every Tuesday before service, still cup every lot four times before it reaches the bar, and still write the day's brew list by hand.

“We do not hurry the roast. We do not hurry the guest.”
